Soy Ginger Chicken Wings

My husband Matthew is a chicken wing fanatic so I always whip up a batch of these easy, delicious and flavorful wings if he’s had a long day.  I bet you have all (or almost all) of the ingredients for this recipe in your pantry right now. These wings are marinated in soy sauce, honey, garlic, ginger, peanut oil and a rice vinegar for a tangy finish.  This recipe calls for broiling the wings but you could easily grill them by grilling on direct heat for about 6-8 minutes per side.  I like to getpremium rice vinegar in the gourmet section of Cost Plus World Market.   If you don’t have rice vinegar you can substitute with white or red vinegar.  If you want to give these wings a little kick, add 1 tablespoon of Srircha sauce to the marinade.

Here’s a great tip my late mother Leeann taught me about preparing fresh ginger:  Peel 8 ounces of fresh ginger and cut into large chunks.   Mince ginger chunks in a food processor until well minced.  Place minced ginger in a large gallon sized freezer bag.  Push down on the minced ginger to flatten.  Place the bag in the freezer.  Whenever you need fresh ginger, you can simple break off a piece and defrost!  This is great time saver and you’ll always have fresh ginger on hand. Ingredients

1/2 cup light soy sauce

1/4 cup rice vinegar

2 tablespoons honey

2 tablespoons peanut oil

4 cloves garlic, minced

2 tablespoons minced fresh ginger

1/4 teaspoon black pepper

4 pounds chicken wings, wing tips removed

Instructions

  • Whisk together the marinade ingredients in a large mixing bowl. Place chicken wings in a large resealable food storage bag. Pour the marinade mixture over the chicken wings. Refrigerate for 2 hours and up to 12.
  • Pre-heat a broiler. Arrange the wings on a broiler pan, top down. Broil the wings for 10-14 minutes, turn over and broil for another 10-11 minutes until golden brown, remove from the broiler. Serve immediately.
