I for one am trying not to gain the Corona 10 during these challenging times but if you’re like me you’re currently on the SEE FOOD DIET:  when you see food you eat it.  LOL.  Even though we should be watching what we eat, we also need to treat ourselves from time to time so why not load up your body with immunity boosting berries the next you’re indulging in dessert?  This luscious recipe is so easy and delicious and you can even use frozen berries if you don’t have fresh on hand.

Mixed Berry Crumble

Ingredients

  • 6 cups berries
  • 1/3 cup white sugar
  • 2 tablespoon cornstarch
  • Topping ingredients:
  • ¾ cup regular oats
  • 1/3 cup brown sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cold butter, cut into cubes
  • 1/2 cup chopped nuts, such as pecans or almonds (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. In an 8 – 10 inch pie or tart dish, combine berries, sugar, and cornstarch. Toss to coat well.
  3. Using your hands, combine the oats, sugar, cornstarch, cinnamon, butter cubes and nuts if using in a medium bowl.
  4. Sprinkle the topping over the berries.
  5. Bake at 350 degrees for 30 minutes. Cool on a wire rack for 10 – 15 minutes. Serve warm or at room temperature with ice cream if desired.
