In honor of Michelle Obama’s Let’s Move platform, this is a fantastic way to get your kids to eat more veggies. The chicken is so tender and the sauce is so yummy that kids don’t seem to care that they’re eating broccoli and red pepper. 1 pound boneless, skinless chicken thigh or breast, cut into bite-sized pieces
1 teaspoon cornstarch +2 tablespoons cornstarch, divided
1 teaspoon salt
1 teaspoon sugar
1 teaspoon soy sauce
1/2 teaspoon white pepper
1/2 pound broccoli florets
1/4 cup chicken broth
1/4 cup oyster sauce
2 tablespoons canola oil, divided
1 teaspoon finely chopped fresh ginger
1 garlic clove, minced
3/4 cup diced red bell pepper
