Pho Inspired One Pan Pasta

Here’s an easy and delicious recipe for a One Pan Past Dish inspired by the classic Vietnamese soup Pho!  Thanks for tuning into my “Copped Up Cooking with Katie” livestream today if you were on-line!!

Pho Inspired One Pan Pasta

Ingredients

  • 16 ounces dried rice noodles
  • 2 Tablespoons fish sauce
  • 2 Tablespoons freshly squeezed lime juice
  • 1 onion, sliced thin
  • 1 Tablespoon sriracha sauce
  • 2 stalks lemongrass, bottom 3 inches, outer stalks removed and smashed
  • 6 large shrimp, peeled and deveined
  • 4 1/2 cups chicken broth
  • 3 sprigs cilantro
  • More cilantro for garnish

Instructions

  1. Combine rice noodles, fish sauce, lime juice, onion, sriracha sauce, lemongrass, shrimp, chicken broth and cilantro sprits. in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning noodles frequently with tongs, until noodles are al dente and broth has nearly evaporated, about 11-14 minutes.
  2. Divide among 4 bowls, and garnish with cilantro Drizzle with more fish sauce and sriracha iff desired. Serve with lime wedges.
