Combine rice noodles, fish sauce, lime juice, onion, sriracha sauce, lemongrass, shrimp, chicken broth and cilantro sprits. in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning noodles frequently with tongs, until noodles are al dente and broth has nearly evaporated, about 11-14 minutes.
Divide among 4 bowls, and garnish with cilantro Drizzle with more fish sauce and sriracha iff desired. Serve with lime wedges.
