Celebrate National Monte Cristo Sanwich day plus a French Country Salad!!

Monte Cristo Sandwich

Ingredients:

  • 1 egg
  • 2 Tablespoons milk
  • 1 tablespoon butter
  • 6 slices white bread
  • 2 Tablespoons mayonnaise
  • 2 ounces sliced deli ham
  • 2 ounces sliced deli turkey
  • 4 slices Swiss cheese (or Provolone)
  • Powdered sugar and raspberry jam, for serving

Directions:

In a shallow dish, whisk together the eggs and the milk.

Melt the butter in a large skillet over medium heat.

Lay 2 pieces of bread down and top with 1 slice of cheese on each piece of bread. Place 1/4 of the ham on top of each piece of cheese.

Take 2 more slices of bread and spread some mayonnaise on one side. Place the mayonnaise side down on top of the ham, then spread more mayonnaise on the opposite side of the bread. Repeat with the 3 remaining sandwiches.

 

Place the sandwiches in the skillet with the butter. Cook until the bread is toasted and the cheese on the side against the skillet is melted, then carefully flip the sandwich over and cook the other side.

Slice the sandwiches in half to serve, and serve dusted with powdered sugar and a side of raspberry jam for dipping, if desired.

French Country Salad

Vnaigrette:

  • 2 tbsp dijon mustard
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves small garlic, minced
  • 1/2 tsp sea salt
  • pinch of freshly ground black pepper
  • juice of 1/2 a lemon
  • zest of 1/2 a lemon

Salad:

  • 1 (5 oz.) bag of arugula
  • 1/2 pound roasted asparagus or blanched green beans
  • 1/2 cup sliced cooked beets, canned, jarred, home-cooked
  • 1/2 cup whole walnuts or pecans, toasted
  • 1/4 cup crumbled goat cheese

Directions:

Make the dressing:  Whisk all of the dressing ingredients in a medium bowl.  Set aside.

Toss all of the salad ingredients in large bowl.  Drizzle the dressing over the salad.  Toss to coat.  Serve immediately.
