Is it just me or is this a crazy week?  I’m gearing up for my cooking demo at the White House!  If you haven’t heard, I’ve been invited by City of Hope to do a cooking demonstration at the White House for the 135th Easter Egg Roll on  Monday, April 1st.  Make sure to follow me on twitter and Facebook as I’ll be tweeting and posting live from the event.  I’ll be posting the recipes I’m making at the White House next week so stay tuned!  Whether you’re getting ready to meet the President and First Lady (I’m sorry if that was obnoxious, but I had to say it:), keeping your kids entertained because it’s Spring Break or running around getting ready for Easter, this Easy Chicken & Broccoli Stir-Fry is an simple, healthy and delicious dish you can get on your dinner table in under 30 minutes.

In honor of Michelle Obama’s Let’s Move platform, this is a fantastic way to get your kids to eat more veggies.  The chicken is so tender and the sauce is so yummy that kids don’t seem to care that they’re eating broccoli and red pepper.  You can find premium soy sauce in the gourmet section of Cost Plus World Market. Ingredients

1 pound boneless, skinless chicken thigh or breast, cut into bite-sized pieces

1 teaspoon cornstarch +2 tablespoons cornstarch, divided

1 teaspoon salt

1 teaspoon sugar

1 teaspoon soy sauce

1/2 teaspoon white pepper

1/2 pound broccoli florets

1/4 cup chicken broth

1/4 cup oyster sauce

2 tablespoons canola oil, divided

1 teaspoon finely chopped fresh ginger

1 garlic clove, minced

3/4 cup diced red bell pepper

Instructions

  • Toss the chicken, 1 teaspoon cornstarch, 1 teaspoon salt, sugar, soy sauce and white pepper in a bowl. Cover with plastic wrap and refrigerate for 20 minutes.
  • Blanch broccoli: Place broccoli in boiling water for 1 minute. Remove and drain. Rinse with cold water and drain.
  • Mix 1/4 cup chicken broth, the oyster sauce and the remaining 2 tablespoons cornstarch. Set aside.
  • Heat a large non-stick frying pan or wok over medium-high heat until not. Add the 1 tablespoon oil and swirl to coat. Add the ginger and garlic and stir-fry until fragrant, about 30 seconds. Add the chicken and stir-fry for about 3 minutes. Transfer chicken to a plate.
  • Add the remaining 1 tablespoon oil to the frying pan or wok. Add the red pepper and broccoli and stir-fry for 1 minute. Stir in the chicken broth mixture and heat until boiling. Add the reserved chicken and heat until mixture boils. about 15 seconds. Dish out and serve immediately with steaming hot brown rice.
