GUNG HAY FAT CHOY!! I was so thrilled to go on The Kelly Clarkson Show to celebrate Chinese New Year and usher in the Year of the Rabbit with Kelly and guest, the incomparable actor Rita Wilson!! I had so much fun cooking my Long Life Noodles recipe from my cookbook Katie Chin’s Global Family Cookbook with these divas and they also got to sample my Long Beans with Cashews!!

We also had a blast chatting about all the fun and festive symbolic Chinese dishes that are served to symbolize wealth, prosperity, good luck happiness and long life!!
Here’s the Long Life Noodle recipe we made and enjoy!!
LONG LIFE NOODLES WITH CHICKEN
8 ounces (226 g) dried Chinese lo nein noodles, spaghetti or linguine
12 ounces (340 g) boneless, skinless chicken breast, cut into bite size pieces
1 teaspoon cornstarch
1/2 teaspoon salt
1/8 teaspoon white pepper
3 tablespoons oil, divided
1 garlic clove, minced
1 red bell pepper, thinly sliced
1/2 cup (50 g) bean sprouts
3/4 cup (51 g) snow peas, tips and strings removed, julienned
1/2 cup (25 g) carrots, julienned
4 Tablespoons soy sauce
1 teaspoon oyster sauce
1 teaspoon sesame oil
1/4 teaspoon white pepper
1/8 teaspoon sugar
Prepare noodles according to package directions. Rinse, drain and set aside.
Toss the chicken pieces with the cornstarch, salt and white pepper. Cover and refrigerate for 10 minutes.
Blanch the snow peas in boiling water, about 1 minute. Using a slotted spoon, transfer the pea pods to an ice bath for 1 minute. Drain and set aside.
Heat the oil in a wok or large non-stick skillet over medium-high heat. Add garlic and stir-fry until fragrant, about 30 seconds.
Add the red pepper and stir-fry for 1 minute. Add the bean sprouts, snow peas and carrots and stir-fry for 1 minute. Add the soy sauce, oyster sauce, sesame oil, white pepper and sugar and stir-fry until blended, about 1 minute. Add the shredded chicken and stir-fry for 1 minute. Add the reserve noodles and toss until coated. Transfer to a platter and serve immediately. p100

GREEN BEANS WITH CASHEWS
1 lb (453g) long green beans
2 tablespoons oil
2 cloves garlic, minced
2 tablespoons hoisin sauce
2 tablespoons oyster sauce
2 oz (50g) roasted cashews
Cook the beans in boiling water until tender crisp (about 4-5 minutes). Transfer the beans with a slotted spoon to an ice bath until cool. Drain and set aside.
Heat the oil in a wok or large skillet over medium high heat. Add the green beans and stir-fry for 2 minutes. Add the garlic, hoisin sauce and oyster sauce and stir-fry for 30 seconds.
Garnish with roasted cashews. Dish out and serve immediately.
