Fava Bean with Cherry Heirloom Tomatoes

Ingredients

• 1 package Melissa's Steamed Fava Beans
• 1/2 sweet onion, sliced very thin
• 1/2 pint cherry heirloom tomatoes
• 1 lemon, juiced
• 1 teaspoon ground cumin
• 1 tablespoon fresh parsley, finely chopped
• 3 tablespoons olive oil
• 2 yellow bell peppers, top, inner ribs and seeds removed

Instructions

1. Combine all of the ingredients except the bell pepper in a medium bowl. Spoon the salad into the yellow bell peppers and serve.
